Since I wake up so early in the morning, I eat all my meals fairly early. This makes eating difficult sometimes, because I eat breakfast early and by 10 AM I am already ready for lunch. I wait until 11, however; that's still early. Since I eat lunch early, I have a snack around 1:30 or 2 PM, which is usually fruit or yogurt and granola. Then, I eat dinner around 4 PM, so that leaves me hungry before bed. That means I eat another snack at night! But, I am getting sick of the snacks I am currently eating, and I want something a little lighter that still keeps me full through the night, because, lets be real, nothing is worst then waking up in the middle of the night starving!!
I did some research and found some new snack options for night time that I figured I would share. I haven't tried them yet, but as I do, I will post my reviews!
Snack 1:
Cottage cheese with baked cinnamon apples
For this one, you use 1/2 a cup of 2% cottage cheese (fat is important!!!) and then bake a granny smith apple sliced up with cinnamon and a sprinkle of sugar if you want. Once it is soft, but still a little crisp, mix it in with the cottage cheese. Voilee! If you want to add a little crunch, use 1 sheet of graham cracker to crunch on top or dip, or use a small amount of granola!

Snack 2:
Cucumber wrap ups
So, these are good if you do not really have a sweet tooth. For these, you can use a whole wheat wrap, spread a thin layer of low fat cream cheese, and then pile on the cucumbers. Wrap it up and enjoy!
Snack 3:
Chocolate dipped bananas
You can buy these in a box at a store, but why do that when you can make them and know exactly what goes into it! Plus, you can add whatever you want :)
Slice a banana, dip each banana coin in melted chocolate, place on wax paper, and freeze them all. You can also dip them in crushed nuts after dipping in chocolate. I like to dip mine into coconut! Wait until frozen and enjoy!
Also, I wanted to discuss that I am going to attempt to be a vegetarian this week. I have nothing against meat whatsoever, however; I don't find it as appealing as I used to. The last time I ate chicken I felt sick. I will still eat fish, but not meat. I think after years of eating so much meat, I am just over it. I will eventually probably eat it again, maybe even next week, but for now I want to see how I do wit this challenge! I already have some really great vegetarian recipes to try this week!
If you have any snack recommendations or vegetarian recipes let me know!
Happy Memorial Day!
With love and health,
Rachel xoxo
