Sometimes on hot summer nights, the last thing you want to do is spend hours slaving over the stove or outside slaving over the grill. Well, fear not, there are plenty of easy meals that take NO TIME to make AT ALL!
A lot of these meals are salads, and I know you're thinking, UGH, a salad?! But salads DO NOT have to be boring!! Have fun and dress them up!!
Meal #1: Salmon salad
Grill, bake, or pan fry your salmon, it takes 20-30 minutes at most!
Romaine, tomatoes, cucumbers, peppers, corn, olives, cheddar jack spicy cheese, hot pepper rings, and salmon with any type of dressing you want! I use a smoked french dressing and it goes really well with this dish.

Meal #2: Tuna salad
Grill the tuna or put in a pan. This takes a little longer to cook if you like it well done, but if you like it rare, it doesn't take long at all.
Romaine, peppers, tomatoes, cucumbers, hot pepper rings, corn, any type of cheese, and type of dressing, tuna on top. I used reduced fat parmesan peppercorn.
Meal #3: Zucchini pizzas
Bake the zucchini, scoop it out, put sauce, toppings (veggies/meats) and cheese and bake until cheese is melted. Simple and delicious! I also like to add asparagus to this dish by baking it for a while.
Meal #4: Salmon, baked potatoes, and vegetables
Bake the salmon until cooked however you like it. Bake some vegetables (I like mushrooms and onions) and roast some sweet potato cubes all together. Simple and just takes a little time in the oven!
Meal #5: Cream cheese cucumber wrap with grapes
This is as simple as you can get! Smear a whole wheat wrap with cream cheese and slice a cucumber and put it over the cream cheese and roll it up! Also, have some sliced veggies or fruits on the side for extra nutrients!
Meal #6: Egg, cheese, turkey bacon wrap
Like breakfast for dinner? This is for you! Scramble an egg, smear some cream cheese on a wheat wrap, fry up some turkey bacon, and put it all together and roll it up! Delish and filling!
This is a vast array of different but simple meals that are filling and healthy and easy to make on a warm summer night after a long day of work/school/exercising!
